"Bain seasons the meats with a proprietary rub of a dozen spices, producing deep flavors. For us, the best thing on the plate was the brisket, followed by the tri-tip, ribs, chicken and tender pulled pork (served with a red vinegar-based Carolina-style sauce)."

 

"Bain certainly knows 'cue. He has long been a judge for the Kansas City Barbecue Society, the 10,000-member organization that sanctions about 300 barbecue contests around the nation."
